Pink Cupcakes 3rd Attempt

Yesterday I couldn't wait to try again because I felt like I was so close to figuring out the secret to making light cupcakes, and hooray...The third time was the charm, well sort of. I had a MAJOR breakthrough!!!
The pink cupcakes were as light as little clouds, exactly and I mean exactly what your looking for when it comes to cake. Delicate crumb, melt in your mouth delightfulness. The flavor was superb, mellow strawberry and a little sweet, just right. The top of the cupcakes were another story, they were as flat as pancakes, however, because I'd used some butter they had this wonderful little crispy ring around the edges. This kind of victory is so exciting because it means I've got the contents right it's just the method of combining them that's the problem-which is easily fixed.



Changes... I will whip the egg whites and then fold them into the rest of the batter.
